Gevulde Champignons

Als borrelhapje of als bijgerecht? Het maakt niet uit wat je kiest, want met dit recept heb je altijd succes!

voor ongeveer een ‘doosje’ champignons à 250 gram

  • 100 gram ongekruid (runder)gehakt;
  • 1 doosje champignons à 250 gram;
  • 1 el natriumarme ketjap;
  • halve ui of sjalot, gesnipperd;
  • 1 teentje knoflook, geperst of in kleine stukjes;
  • geraspte kaas;
  • 1/2 tl gemberpoeder;
  • 1 tl paprikapoeder;
  • flinke snuf cayennepeper;
  • snufje peper.

Overige bijzondere benodigdheden:
Een oven, een bakplaat en bakpapier.


  1. Verwarm de oven voor op 200°C.
  2. Neem een kom en doe het gehakt erin. Voeg de ui of sjalot en de knoflook toe aan het gehakt en meng (of prak, ik heb zelf een hekel aan vieze handen) het goed door elkaar.
  3. Prak of boetseer het gehaktmengsel uit elkaar als een soort pannenkoek of grote dunne hamburger. Strooi de kruiden over het gehakt en meng deze goed.
  4. Voeg nu de natriumarme ketjap toe en meng opnieuw goed.
  5. Neem het bakpapier en leg deze op de bakplaat (knip zo nodig bij).
  6. Verwijder de stelen uit de champignons. Als ik die dingen eruit probeer te ‘wrikken’ heb ik een stukje steel in mijn hand en de rest zit er dan nog lekker in, dus wat ik altijd doe is met een scherp mesje de steel los snijden uit de champignon en dan flink trekken. Werkt bij mij altijd!
  7. Gebruik een lepel om het gehaktmengsel in de ontsteelde (dit is geen woord, maar het klinkt prachtig) champignons te doen. Zet de gevulde champignons op de bakplaat en bestrooi ze met een klein beetje geraspte kaas.
  8. Bak de gevulde champignons af in ongeveer 15 minuten gaar.


  • Indien u een kaliumarm dieet heeft, kunt u de ketjap ook weglaten (en een theelepel suiker toevoegen voor de zoete smaak).
  • Liever vegetarisch? U kunt het gehakt vervangen door een roomkaas.
  • Ook lekker: een Italiaanse variant. Vervang de ketjap door tomatenketchup of tomatenpuree en vervang de gember door (verse) basilicum.

Stel, in een doosje à 250 gram zitten 15 champignons, dan is het per gevulde champignon ongeveer:
Natrium: 26 mg
Kalium: 163 mg (indien de natriumarme ketjap weggelaten wordt, is het 100 mg kalium)
