Na de vakantie is het weer hoog tijd voor een lekker recept! Vaak hebben mensen last van een paar vakantie kilootjes, dus die gaan we er lekker af eten.

Ingrediënten voor 2 personen:
– 2/3 courgette;
– 2 rode uien;
– 8 kers tomaatjes (100 g) + 1 voor garnering (totaal 9);
– geraspte mozzarella kaas of pizzakaas.

1. Verwarm de oven voor op 190°C.
2. Was de courgette en snijd deze in plakjes. Snijd de uien in halve ringen en de 8 kers tomaatjes in kwarten.
3. Bak de uien en plakjes courgette kort aan.
4. Vet de ovenschaal in. Leg onderop de uien en de plakjes courgette “dakpansgewijs” er bovenop. Laat een paar plakjes over voor de garnering.


Doe daar weer boven de kwartjes kers tomaat.


Ten slotte de kaas en de garnering!
5. Zet het gerecht in de oven en laat het in 20 tot 25 minuten belachelijk lekker worden!

Per persoon: 100 mg natrium en 496 mg kalium.

Serveren met pasta of aardappeltjes. Vegetarisch. Ook leuk in een hele grote ovenschaal bij een diner!

Eet smakelijk!
